Kabuki at the Four Seasons Ritz in Lisbon

In Spain, Kabuki is well-known for its Japanese-Mediterranean fusion—the original, in Madrid has a Michelin star. Recently, the brand made its arrival in Lisbon. It landed in an enviable location, in the Galerias do Four Seasons Hotel Ritz Lisbon, a subterranean space that had been going unused. In less than a year, Chef Paulo Alves and the team earned a Michelin Star.



Although front of house is minimal in design, behind the scenes the attention is on maximum quality.  Chef Alves oversees the stoves, with the service orchestrated by Victor Jardim and the wines chosen by Filipe Wang. They all bring a quiet competence and confidence to their work.

In the main, 72-seat dining room, they serve a choice of tasting menus (100€ or 135€). Much of it seems purely Japanese—there’s an excellent selection of sushi and sashimi—but sometimes the Latin influence becomes unmistakable, as in a plate of raw tuna topped with breadcrumbs and confit tomatoes, a nod to the Spanish classic of pan con tomate. And then, there are bites that are pure pleasure, like a nigiri with a fried quail egg and white truffle pâté.

Along with the main dining room, there is a bar and an intimate private dining space called the Kabuki Experience, where an even more special menu will be served. There are plans for a terrace overlooking Parque Eduardo VII.
