DOP is Chef Rui Paula’s acronym for Degustar e Ousar no Porto. It is his philosophy for preparation and presentation of his inspired cuisine. After achieving critical and popular success with his restaurant DOC in Folgosa and earning a Michelin star at Casa de Chá da Boa Nova, Paula showcases his talents in his hometown with the aptly named DOP.
Located in the historic Ribeiro district of Porto, DOP sits comfortably inside the 14th century Palácio das Arts. Over the centuries, this grand building has been home to a convent, civic offices, Bank of Lisboa and an insurance company.
DOP is a welcome addition to the Palâcio. While the exterior of the building is traditional and stately, the inside is spacious and modern. A high ceiling in the two story space provides a vast openness for the distribution of dining areas and kitchens. This blending of old and new design is an appropriate environment for the signature cuisine of Paula.
Paula is a native of Porto. His dishes are inspired by the very traditional flavors and aromas from his childhood. Yet, his flair for innovation leads to creative dishes that are reminiscent of Portuguese cuisine but embraces a new millennium freshness.
Paula has devised three programs to choose from in the form of the Douro menu, the Artes Menu, and the Sea Menu. Selections include the house specialties of tripe Porto or codfish Gomes de Sá, and other guest favorites such as carpaccio de lingual, terrine of foie gras, codfish Congregados and tamboril gratinado. For dessert: trilogy of lavender.
DOP also has a special area set aside for “show cooking.” Here, the service is faster and more economical. A dedicated open kitchen is set up for guests to observe the cooking process. 14 unique menu selections are on offer for show cooking.
