Food Circle – Intimate Outside Dining at Sublime Comporta in Alentejo

Food Circle, Comporta’s most intimate, immersive dining experience unfolds nightly in the summer months. Each evening, 12 lucky guests—a mix of international visitors and Portuguese regulars—gather around a round counter in an open-air pavilion deep within the Sublime Comporta hotel’s 1,500-square-meter organic garden.



Chef Tiago Santos, joined Sublime Comporta in 2018 after working at Bar Douro in London and several Michelin-starred restaurants in Portugal, including Casa da Calçada in Amarante and The Yeatman in Porto.

Each night, he or his deputies create a different tasting menu based on which of the garden’s 300 varieties of vegetables and herbs are at their peak that day, as well as sustainably caught fish and pasture-fed meats, from trusted local suppliers. The chefs use only ancestral cooking methods, and fire plays a leading role. There are typically somewhere between 10 and 14 courses, and the conversation flows as the evening unfolds as at leisurely pace, the better to savor the pleasures of the garden.

No two nights are the same at Food Circle, but one constant is that guests are able to have direct conversation with the chefs, with like-minded food-lovers, with the scents of the garden, the earth underfoot and the stars above. It is an experience that is dynamic and meant to be shared.

One night, the luxuriant dishes included oysters with cucumber and apple, crab with broad beans and agastache (hissop), pig’s head with langoustine and veal tendon, and a dessert of foie gras with pear and black pepper.

All of it is, of course, paired with Portuguese wines, Portuguese music, and other elements.
