A pair of bartenders, one from Italy and the other from the Basque region of Spain opened this unusual little hybrid of a bar on a narrow street in Mouraria in late 2021. Quattro Teste is a fusion that works, and it also provided Lisbon with a couple of things it had been missing before: negronis and kalimotxo (the Basque classic that mixes red wine and Coca-Cola) on tap; and Basque cider served straight from a large wall-mounted barrel.
The owners, Alf del Portillo and Marta Premoli, practically grew up behind bars, and it shows. Their hospitality is warm, confident and thoughtful, and their cocktails are top-notch. (Del Portillo took first place in the World Class Cocktail Competition in 2015.)
So are the Italian-influenced pintxos (the Basque equivalent of tapas) that emerge from the small open kitchen of their Brazilian chef, Clara Uchôa. These include marinated mackerel with roasted pepper and arugula on focaccia, Iberian ham croquettes, and fried gnocchi with gorgonzola sauce.
