In autumn 2021, exactly a year after their initial opening, the proprietors of Terroir Restaurant, in Lisbon, came back with a bigger, better, and more ambitious incarnation. Let’s call it Terroir 2.0—after all…they do!
In the new version, the original counter-only restaurant has been doubled in size, after they took over the building next door. It’s still an intimate affair—far more appealing than most of the tourist restaurants you’ll find nearby in Baixa—with just a handful of tables in a handsome, blue-paneled room, as well as the bar seating next door.
They also brought in a new chef, Tiago Rosa, who passed through a number of well-regarded restaurants and brings his version of “Portuguese products with a twist” to the new endeavor. Here, he offers a choice of tasting menus, one with five courses and the other with eight. (At 45€ and 59€, respectively, they’re a great value for the scope and quality.
Like any self-respecting chef, Rosa changes the menu frequently, but dishes include the likes of chickpeas, curry, and gooseberry, and sea bass, smoked potato, and seaweed. There are vegan options for both menus, as well as wine pairings, and for a guest who doesn’t have a sweet tooth, he happily swapped out the dessert (chocolate, coffee, and rum) for a sweet-savory (and surprisingly successful) dish of cuttlefish, beans, and white chocolate.
