Gilbert Van Lee’s Atmosphere Turns a Tiny Dão Village into a Fine-Dining Destination

Portugal’s most ambitious new fine-dining restaurant of 2026 is not in Lisbon or Porto, nor in the moneyed Algarve or luxe Douro Valley. Instead, longtime Belgian chef Gilbert Jean Van Lee chose Vilar Seco, a village in the Dão wine region, for his deeply personal new endeavor. His restaurant, Atmosphere, is both a love letter to Portugal and the culmination of an international career that’s spanned more than three decades.



Van Lee moved to Portugal with his wife in 2019, settling first in Dornes, a historic village in the center of Portugal, and then opening a restaurant in Tomar before their journey took them to Vilar Seco, a tiny town of fewer than 700 inhabitants that’s somewhat near Viseu.

It’s not the sort of place you just stumble upon, but it is home to the historic Solar de Vilar Seco, also known as a Palácio Ponces de Carvalho, which had already been transformed into a boutique manor house hotel. Atmosphere originally took shape within that project, but in summer 2026, the chef took things a step further. He opened the new, independent Atmosphere Private Dining on a private floor of his own residence, across the street from the hotel. (The original restaurant will continue as a venue for weddings and private events.)

“The concept is deliberately different from a conventional fine-dining restaurant,” says the chef, who personally welcomes each guest, walks them through the ever-changing seasonal menu (which comes with six, eight, or ten courses), and then prepares and presents their dishes, along with the wines that go with them. “With only four tables per service, we are able to offer what I consider a complete dining experience rather than simply a succession of dishes.”

He continues, “I want guests to understand the story behind a dish, why a certain product was chosen, where it comes from, why a particular wine accompanies it, and what I wanted to achieve with the combination. At the same time, it remains informal, warm, and personal.”

It was also important for him to build his project away from the usual centers—and to demonstrate that ambitious gastronomy can exist in a small village. The location means it’s surrounded by vineyards and local food producers, and the quality of the experience means that it can attract guests from around Portugal and from around the world.
